Drawing on the historic recipes once served to visitors here at the former Grand Duke’s residence, Chef Umberto Toscano presents daily menus of low-calorie, healthy Tuscan fare in an elegant setting. Dishes might include house-made tagliolini with scorpion fish, peas, and tomatoes or grouper with zucchini blossoms and avocado puree.
